This purebred pedigree Kumamoto is produced in San Quintin, Baja California where the pristine cold waters of the Pacific are rich with plentiful algie year round. The moderate air temperature remains in the 70° - 80° range year round producing a perfect oyster growing environment for this aquaculture. Although the Authentic Kumamoto are a small oyster, they have a robust salty punch with a sweet melon finish.

SHIGOKU

The Shigoku oyster is a suspended culture pacific oyster that is repeatedly tumbled during the course of its grow-out. The tumbling process takes place while the oyster is in the water by means of a round floating basket that is constantly turned end over end by wave and tidal action. The result, which takes almost two years, is an oyster that has a smooth, hard shell and a very round shape. It tends to be salty, mildly sweet, with a long fruity finish.
FAT BASTARD

The Fat Bastard oyster is a suspended culture pacific oyster that is repeatedly tumbled during the course of its growth. This three year old oyster is almost twice the size of its sister the Shigoku oyster and also has a smooth, hard shell and a very round shape. It tends to be salty, mildly sweet, with a long fruity finish.
