The Shinnecock Indian Tribe produces this fabulous oyster using a growing method called the "Stick & Branch Method" which they invented centuries ago. It is believed that The Shinnecock were the first oyster farmers. Their generational experience allows them to produce what is considered by many as the perfect East Coast oyster with aromas of faint herbal briars and an ocean splash of mellow/sweet mineral brine. It's soft but tight flesh delights the tongue with a light clean pistachio nut finish.

These are the direct descendants of the original colony of oysters discovered by the Pilgrims and they may be the tastiest oysters on the East Coast. Belons, also known as European Flats. They were brought to the US from Europe in the 1950s, and since then, have flourished to become a natural species in the waters of Maine. They are diver harvested throughout the season between September and April. They are banded to help keep them closed for shipping and are delivered in a styrofoam lined box. You either love them or hate them, but a genuine oyster connoisseur will learn to appreciate the strong brine and intense coppery finish.
